Spring-To-Go, London

This convivial store in Notting Hill was created as an extension of the iconic Spring restaurant in London, owned by chef Skye Gyngell. While the restaurant was closed during Covid lockdown, the store allowed Spring to keep its team working and sharing their passion for food. The fit-out continues the joyful spirit of Spring, also designed by Briony in collaboration with Skye, offering a pleasing tonal experience of natural materials and pastel hues.

Original features such as the concrete floors were retained, while new limed oak shelves and cabinets add warmth, and Carrara marble counters bring classic appeal. A coffee and juice bar is painted a fresh pea green, and the menu on the pink-painted walls evokes old-school sandwich bars. The design is serene and simple, allowing the goods and produce to be the focus, from the rows of jars with their custom-made labels to the colourful fresh produce on the stepped display.
